From field and grain to fire and sweetness, Roots & Regions is a five-course exploration of Lazio, the region surrounding Rome, told through its most enduring dishes.
This tasting walks through the agricultural backbone and culinary identity of central Italy: humble broths, hand-rolled pasta, ancient Roman baking traditions, and the crisp snap of pizza tonda romana. Each course is intentionally built, honoring both countryside and capital.
